About Us

Founded in 2014 by Toby and Alix Gadd after a life-changing trip to Costa Rica, Nuance Chocolate began as a kitchen hobby and quickly grew into one of a small number of true bean-to-bar chocolate makers in the U.S., roasted, stone-ground, and crafted in a small factory just two blocks from our Old Town café. Over the years, that kitchen hobby blossomed into the world’s largest selection of single-origin dark chocolate bars, with origins rotating through our lineup at any given time.

Tyler and Megan moved to Colorado and quickly fell for Nuance’s impressive lineup of single-origin bars and hands-on craft. High-school sweethearts, Tyler spent ten years in the Navy as a nuclear operator and plant supervisor before switching gears to brewing at The Gilded Goat. Megan started as a hairstylist, then found her groove in specialty coffee, until she and Tyler realized chocolate was their true calling. When Toby and Alix decided to sell, Tyler and Megan jumped at the chance, and the founders passed the business on knowing it was in capable, passionate hands.

Nuance’s mission is to craft world-class chocolate that honors both people and planet. We are committed to ethical sourcing, fair relationships with smallholder farmers, and minimizing our environmental footprint at every stage. We believe in integrity, inclusivity, and supporting our community in Fort Collins and beyond.

Together they honor the Gadds’ traditions, fair trade relationships, small-batch craftsmanship, and a café that’s as welcoming as it is aromatic.
