Our Process
From the moment our single-origin cacao arrives, we honor its journey with precision and poise. Each bean is welcomed, tended, and transformed through hands-on care, allowing us to reveal the depth of flavor and velvety texture that make our chocolate unforgettable.


1. Hand Sorting
Every bean passes through our (mostly Ed's) hands. We inspect and select only the finest cacao, removing defects to ensure a pristine foundation for every batch.
3. Crack & Winnow
After roasting, the beans are gently cracked and winnowed, meticulously separating those heavy, flavorful cacao nibs from the papery outer husks.


2. Roast
We develop customized, low-temperature roast profiles tailored to each origin, gently unlocking intrinsic flavor notes while protecting the bean's delicate nuances.
4. Refining & Conching
Pure nibs are stone-ground in traditional melangers for days. This slow, patient process reduces particle size to under 20 microns, resulting in a smooth texture.
